Date Night Dinner April


It is the 3rd recipe for the date night dinner ideas! This time we are doing Hello Fresh 's gluten free/nut free Pork tenderloin. It was yummy! My fiance licked the plate. . . literally! Again just a disclaimer this is not my recipe! The ingredients, nutrition facts and steps are from my Hello Fresh booklet! This is one of the recipes we loved in my household that I wanted to share with you!
Honey Glazed Pork Tenderloin “30 minutes” Nut free. Gluten free
Pork tenderloin 12 oz
Sweet potato 12 oz
Green beans 6 oz
Honey 1 tbs
Fresh thyme ¼ oz
Chicken stock concentrate 1
Garlic 2 peeled cloves
Butter 1 tbs (dairy)
Olive oil 2 tbs
Baking sheets
Peeler

Steps:

  1. Prep
    1. Peel and cube the sweet potato into ½ inch cubes
    2. Mince or grate garlic
    3. Strip thyme leaves
    4. Trim green beans
  2. Roast the potatoes toss the sweet potatoes to one side of the baking sheet. Drizzle with olive oil season with salt and pepper then bake for 20-25 minute
  3. After 10 minutes of the sweet potatoes cooking, put green beans on the other side of the pan drizzle with olive oil then season with salt and pepper
  4. Continue cooking both potatoes and beans for 15 minutes
  5. Heat a drizzle of oil in medium size pan over medium-high heat. Pat the pork dry and season both sides with salt and pepper. Sear it for 3-4 minutes each side. (tip: time out the 3-4 minutes. Don’t touch the meat once you place it in the pan let it sear the whole time. Thanks Bobby Flay!)
  6. Put the seared pork on another baking sheet and place in oven for 8-12 minutes or until the desired doneness. Remove the sheet with the pork and let it rest for 2-3 minutes before thinly slicing.
  7. In the same pan that you seared the pork, heat some more olive oil and add the garlic and thyme tossing for 30 seconds or until it is aromatic. Add in tablespoon of honey ½ cup of water and chicken stock concentrate, scrape the bottom bits from searing the pork off the pan and into the sauce. Bring sauce to a simmer for 2-3 minutes until thickened and reduced by ¾ . swirl in your butter with some salt and pepper.
  8. PLATE bed of beans and sweet potatoes. Then top off with some slices of pork tenderloin. Glaze the top with your honey glaze #nomnom
